Crockpot Potato Soup

A few of my favorite recipes lately...
 
 
Potato Soup
 
This was delicious. I ate it for dinner, lunch the next day and as a snack. So good!

30oz bag frozen hash browns (I used shredded)
28oz chicken broth
10.75oz can cream of chicken soup
2 tablespoons dried, minced onion (I used onion powder)
1 teaspoon ground black pepper
8oz cream cheese, softened
4-6 slices bacon, cooked and crumbled ( No bacon here)
2 cups shredded cheddar cheese

Mix frozen hash browns (no need to thaw), chicken broth, cream of chicken soup, dried minced onion, and pepper in Crock pot and cook on low for 5 hours. (I cooked mine on high for 4 hours)


Remove lid and stir in cream cheese. Cook another 30 minutes and serve
 
 
Beef Stew - always a favorite
 
1 package stew meat
1 package stew seasoning (whisk into 1 1/2 cups cold water)
5 - 6 potatoes peeled and diced
3 - 4 carrots peeled and sliced
2 - 3 celery stalks sliced
 
This is so easy because you can add or take away veggies depending on how much stew you want. 
 
Layer potatoes, carrots, celery, meat and liquid. Cook on high for 4 hours and let sit on warm for another 45 minutes or so. This helps the meat tenderize. 
 
Serve with shredded cheese and yummy bread.  


Broccoli Casserole
 
1 bag frozen hash browns (for my family I used half)
1 jar Alfredo sauce
1 can of chicken (or you can cook and shred)
2 heads of broccoli
1 bag shredded mozzarella cheese
 
Cut broccoli into tiny pieces so it will soften faster. 
 
Mix frozen hash browns with some Alfredo sauce. Layer broccoli, chicken, more Alfredo sauce and shredded cheese. 
 
Top with bread crumbs or dried onions. 
 
Bake covered at 350 for 45 minutes and uncovered for 15.
